A quality opinion is only useful if it travels

Coffee is judged at several points by several people, and rarely by the same method twice. An exporter's grading table, a visiting buyer's eye and a destination lab do not produce numbers that can be laid side by side, which is how a disagreement about a lot becomes a disagreement about whose grader was right.
